Saturno & Bro was created to bring together something our family has always shared: a love of food, hospitality, creativity, and building things.
Our experience crosses hospitality operations, restaurant and café management, business strategy, branding, design, culinary, and entrepreneurship. That mix shapes the way we work.
We don’t see operations, finance, guest experience, food, beverage, design, marketing, and culture as separate departments living in separate boxes. To the guest, they are all one experience — and to the business, they all affect the same bottom line.
That’s why we approach hospitality as a complete system.

He brings together operations, strategy, creativity, and a hands-on understanding of what makes a place feel good, for the guests, the team, and the business behind it. He loves finding practical ways to make hospitality work better without losing the personality that makes each place special.

Eduardo brings the culinary perspective to Saturno & Bro. Shaped by Caracas, Barcelona, and New York, he has built his career in restaurant kitchens and as the founder of Arroces NYC, a roving street-paella concept centered on food, collaboration, and community. He connects menu development, kitchen operations, service, and atmosphere to help create hospitality concepts that work behind the scenes and give guests a clear reason to come.

MADE’s food and beverage operation spans multiple concepts under one roof — each with its own guest behavior, revenue opportunities, operating challenges, and role within the hotel.
The engagement started with a three-day on-site diagnostic focused on a simple question: where was performance being lost, and what could realistically change it?
Combined financial analysis, operating data, and hands-on observation to identify the most important revenue, labor, cost-allocation, and guest-spend opportunities across the hotel’s F&B outlets.
From there, the work moved from diagnosis to action: outlet positioning, labor and kitchen structure, revenue strategy, events and programming, partnerships, KPI visibility, and clearer management accountability.
A prioritized findings report and 60–90 day action plan presented to ownership and investors — giving the team a clearer picture of where performance was being lost, which levers mattered most, and what to tackle first.

At a busy neighborhood café, operational improvement rarely comes from one dramatic change.
It comes from making hundreds of small things happen consistently — every day, across every shift.
Hands-on operational leadership across scheduling, labor, team training, task management, opening and closing procedures, purchasing, vendor relationships, inventory, invoice workflows, DOH readiness, catering support, guest experience, and the inevitable daily problem-solving that comes with running a café.
The focus has been on building practical systems around the way the business actually operates — not adding process simply for the sake of having more process.
Standardized daily checklists and task systems, clarified ordering and inventory routines, strengthened accountability and food-safety practices, and documented core management procedures into a detailed transition system.
The goal: a café that is easier to run, easier to hand over, and more consistent for both the team and the guest — without losing the personality that makes it a neighborhood place.

Street Paella Pop-Ups · New York City

Arroces turns paella into a New York event: large pans, chef collaborations, music, drinks, and crowds gathered around rice.
To guests, each pop-up feels social, energetic, and spontaneous. Behind the scenes, it depends on careful coordination across the culinary team, host venue, collaborators, vendors, equipment, timing, and service.
Led the production and coordination of Arroces events and pop-ups, translating each concept into a practical plan from early preparation through day-of execution.
The work included production timelines, venue and partner coordination, team communication, equipment and vendor logistics, setup and breakdown planning, service flow, guest experience, and real-time problem-solving on site.
The focus was to protect the personality of each event while giving everyone involved clear responsibilities, clear timing, and one shared plan.
A structured and repeatable approach to producing Arroces events without making the experience feel overproduced.
Stronger coordination across teams and partners helped each pop-up move smoothly from idea to service. It gave Chef Eduardo Cuenca and the culinary team more room to focus on the food while the complete guest experience came together around them.
